Pistachio Shrimp

Ingredients

  • 400 g of fresh, peeled shrimp
  • 100 g of unsalted pistachios
  • 2 cloves of garlic
  • Fresh parsley to taste
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Grated lemon zest
  • 50 ml of brandy or another liquor to flambe (optional)

Preparation

  1. Begin by toasting the pistachios in a non-stick pan without adding fats. As soon as they start to release their aroma, remove them from the heat and chop them coarsely with a knife, not too finely to keep a certain texture.

  2. Peel the garlic cloves and slice them thinly. In a pan, heat a drizzle of extra virgin olive oil and brown the garlic, without burning it.

  3. Add the peeled shrimp and sauté them quickly in the pan until they turn pink.

  4. If you decide to use brandy, this is the time to flambe the shrimp: pour the liquor and let the alcohol evaporate on high heat.

  5. Add the chopped pistachios, a pinch of salt, pepper to taste, and grated lemon zest for a fresh and aromatic note. Stir well to flavor the shrimp with all the ingredients.

  6. Once removed from the heat, sprinkle with chopped fresh parsley to add color and freshness to the dish.
