Ingredients
- 8 thin slices of meat (veal, pork, or chicken depending on preference)
- 100 grams of shelled and unsalted pistachios
- 80 grams of grated Parmesan cheese
- 8 thin slices of cured ham
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Flour, for dusting the rolls
- Dry white wine, for deglazing
- Meat or vegetable broth, as needed

Begin by lightly toasting the pistachios in a non-stick pan without adding fats. Let them cool slightly and then coarsely chop them.

On each slice of meat, lay a slice of cured ham. Sprinkle with a little grated Parmesan cheese and a handful of chopped pistachios. Season with salt and pepper.

Roll up each slice of meat on itself to form the rolls and secure them with a toothpick to maintain their shape.
