Pistachio Poke Cake
17/11/2023The Pistachio Poke Cake is a scrumptious American-origin cake characterized by small holes within the dessert that are then filled with cream or jelly. Here’s how you can prepare a version that embraces the Italian taste of pistachio.
Ingredients
- 1 ready-made Sponge Cake or prepare with your favorite recipe
- 1 packet of pistachio pudding
- 500 ml of milk for the pudding
- 2 tablespoons of pistachio paste to further flavor the pudding (optional)
- 200 ml of whipping cream
- Chopped pistachios or pistachio granules for decoration

If you don’t have a ready-made Sponge Cake, make one following your trusted recipe. Once it’s ready and cooled, proceed to the next step.

Prepare the pistachio pudding according to the instructions on the package, using the 500 ml of milk. If you wish, to intensify the flavor, you can add two tablespoons of pistachio paste to the pudding mixture.

In the meantime, take the Sponge Cake and make quite wide holes in it, using the handle of a wooden spoon or similar, so as to be able to pour the pudding into them.

Once the pudding has cooled down but is still fluid, pour it into the holes created in the Sponge Cake, making sure to fill them all.

Let the cake cool completely and the pudding set inside the holes.

Whip the cream until it is firm and spread it evenly over the surface of the cake with a spatula.

Decorate with pistachio granules or chopped pistachios to add crunch and a contrast of color.

Let the Poke Cake rest in the refrigerator for at least an hour before serving.

The Poke Cake owes its name to the process of “poking”, that is, creating holes in the dessert after baking, which allows various fillings to better penetrate the cake, making it particularly moist and flavorful.
