Pistachio Meat Rolls

Ingredients

  • 8 thin slices of meat (beef, veal, or pork depending on preferences)
  • 100 g of shelled and chopped pistachios
  • 50 g of smoked bacon, cut into thin slices
  • 50 g of grated cheese (Parmesan or pecorino)
  • Flour, as needed
  • Extra virgin olive oil, as needed
  • Salt and pepper, as needed
  • White wine, to deglaze
  • Vegetable or meat broth, if necessary

Preparation

  1. Take the meat slices and lightly pound them to make them even thinner.
  2. Finely chop the pistachios and mix them with the grated cheese, adding a pinch of salt and pepper.
  3. Lay out the meat slices and spread this mixture on top. Add a thin slice of bacon to each piece of meat.
  4. Roll up the slices of meat upon themselves, creating the rolls, and secure them with a toothpick to prevent them from opening during cooking.
  5. Lightly flour the rolls.
  6. In a pan, heat a drizzle of oil and place the rolls in it. Brown the rolls on all sides to seal the juices inside.
  7. Deglaze with a bit of white wine and let it evaporate.

  9. Once the rolls are cooked and the sauce has reduced, adjust the seasoning with salt and pepper and serve.
