Swordfish in Pistachio Crust with Potato Wedges

Preparazione

  1. Preheat the oven to 200 °C.
  2. Begin by preparing the pistachio crust: coarsely chop the pistachios. You can leave some whole for a more rustic texture and a final visual appeal.
  3. Clean the swordfish well and dab it with kitchen paper to absorb excess moisture. Season it with a pinch of salt, pepper, and some lemon juice.
  4. Press the swordfish steaks onto the chopped pistachios so that they stick well on both sides.
  5. In a non-stick pan, heat a drizzle of olive oil and quickly brown the swordfish steaks on both sides to seal in the juices. This should take about one minute per side.
  6. Transfer the swordfish steaks to a baking tray lined with parchment paper and bake for about 10-12 minutes, until the crust is golden and crispy.
  7. Meanwhile, wash and slice the potatoes into wedges without peeling them. Sprinkle with extra virgin olive oil, salt, pepper, thyme, and a couple of unpeeled garlic cloves. Arrange them on a baking tray and cook in the oven with the fish for approximately 20 minutes or until they are golden and tender.
  8. Serve the swordfish in pistachio crust accompanied by the baked potato wedges and a sprinkle of freshly chopped parsley.
