Lamb Chops in a Pistachio Crust

Lamb chops in a pistachio crust are a refined and tasty dish, perfect for a special dinner. Here’s how to prepare them with an Italian twist.

Ingredients

  • 8 lamb chops
  • 100 g unsalted pistachios
  • 2 sprigs of fresh rosemary
  • 2 cloves of garlic
  • 50 g grated Parmesan cheese
  • 1 tablespoon of Dijon mustard
  • Bread crumbs as needed
  • Salt and black pepper as needed
  • Extra virgin olive oil as needed

Preparation

  1. Take the lamb chops and make sure they are clean. Season them lightly with salt and pepper on both sides.
  2. In a food processor, grind the pistachios with the rosemary and garlic until you have a granular consistency, but not too fine.
  3. Transfer the mixture to a bowl and mix it with the Parmesan and enough bread crumbs to create a “breading”. Adjust the seasoning with salt if necessary.
  4. Brush the chops with Dijon mustard to help the crust adhere.
  5. Coat the chops in the pistachio mixture, pressing well to make the crust stick.
  6. Preheat the oven to 200 °C.
  7. Heat a drizzle of oil in an oven-safe skillet over medium-high heat. When the oil is hot, add the chops and sear them for a few minutes per side, until well-browned.
  8. Transfer the skillet to the oven and cook the chops for about 10-15 minutes, or until done to your preferred level of doneness.
  9. Once ready, remove the chops from the oven and let them rest for a few minutes before serving.

Serve the lamb chops in a pistachio crust with a light side dish, such as a fresh salad or steamed vegetables.
