Ingredients
- 8 lamb chops
- 100 g unsalted pistachios
- 2 sprigs of fresh rosemary
- 2 cloves of garlic
- 50 g grated Parmesan cheese
- 1 tablespoon of Dijon mustard
- Bread crumbs as needed
- Salt and black pepper as needed
- Extra virgin olive oil as needed
Preparation
- Take the lamb chops and make sure they are clean. Season them lightly with salt and pepper on both sides.
- In a food processor, grind the pistachios with the rosemary and garlic until you have a granular consistency, but not too fine.
- Transfer the mixture to a bowl and mix it with the Parmesan and enough bread crumbs to create a “breading”. Adjust the seasoning with salt if necessary.
