Pistachio Cream Tiramisù

Pistachio Cream Tiramisù is a scrumptious variant of the classic tiramisù that enriches the dessert with the delicious and slightly salty taste of pistachios. Here is the recipe for a sweet that will melt the hearts of lovers of these wonderful nuts.

Ingredients

  • 250 g of mascarpone
  • 100 g of pistachio cream
  • 3 very fresh eggs
  • 80 g of granulated sugar
  • 200 g of ladyfinger biscuits
  • 300 ml of cold brewed espresso coffee
  • Unsalted crushed pistachios to taste
  • 1 pinch of salt
  • Unsweetened cocoa powder for dusting (optional)

Preparation

  1. Begin by separating the yolks from the whites of the eggs.
  2. In a bowl, whisk the yolks with the granulated sugar until the mixture is light and frothy.
  3. Add the mascarpone and pistachio cream to the mixture of yolks and sugar, and mix gently until you get a smooth and homogeneous cream.
  4. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  5. Carefully fold the whipped egg whites into the mascarpone mixture, stirring from bottom to top to keep the mixture fluffy.
  6. Prepare the espresso coffee, let it cool down and then quickly dip the ladyfingers, being careful not to soak them too much.
  7. In a serving dish, arrange a layer of soaked ladyfingers.
  8. Cover with half of the mascarpone and pistachio cream.
  9. Lay a second layer of ladyfingers and finish with the rest of the cream.
  10. Smooth the surface well and sprinkle with the crushed pistachios (and, if you wish, with a little bit of unsweetened cocoa).
  11. Let the tiramisù sit in the refrigerator for at least 4 hours, or even better overnight, to allow the flavors to blend perfectly.
