Pistachio Cake

Ingredients

  • 200 g of unsalted pistachios
  • 150 g of soft butter
  • 150 g of granulated sugar
  • 3 large eggs
  • 100 g of all-purpose flour
  • 50 g of potato starch
  • 1 sachet of baking powder
  • Grated zest of 1 untreated lemon
  • A pinch of salt
  • Icing sugar for decoration (optional)

Preparation

  1. Preheat the oven to 170 °C and prepare a cake pan by buttering and flouring it, or lining it with parchment paper.

  2. Grind the pistachios until you have a flour not too fine, leaving some pieces to give texture and flavor.

  3. In a bowl, cream the soft butter with the granulated sugar until light and fluffy.

  4. Add the eggs, one at a time, mixing well after each addition.

  5. Incorporate the lemon zest and the pinch of salt.

  6. Separately, mix the flour, potato starch, and baking powder. Add this mixture of dry ingredients to the butter, eggs, and sugar mixture, stirring gently to avoid lumps.

  7. Add the pistachio flour to the mixture and stir until you have a homogeneous batter.

  8. Pour the batter into the prepared pan and level with a spatula.

  9. Bake for about 35-40 minutes or until a skewer inserted in the center of the cake comes out clean.

  10. Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

  11. Before serving, you can dust the cake with icing sugar for a more elegant finish, if you like.
