Pink Mayonnaise

Pink mayonnaise is a colorful and slightly spicier variant of classic mayonnaise. It’s excellent for accompanying fish, salads, or as a sauce for appetizers. Here’s how to make it:

Ingredients

  • 200 ml of mayonnaise (you can use a ready-made one or make it at home)
  • 2 tablespoons of ketchup
  • 1 teaspoon of brandy or cognac (optional)
  • A few drops of lemon juice
  • 1 teaspoon of mustard (optional)
  • Salt and pepper to taste
  • A few drops of Tabasco (optional, for a spicier variant)

Preparation

  1. In a bowl, pour the mayonnaise.
  2. Add the ketchup and mix well until a uniform color is obtained.
  3. If you want to add an extra touch of flavor, incorporate the brandy or cognac.
  4. Adjust the taste with lemon juice, a pinch of salt, and freshly ground black pepper.
  5. If you like a sharper note, you can add the mustard. For a slightly spicy version, put a few drops of Tabasco.
  6. Mix all the ingredients until you get a smooth sauce.

Make sure to taste the sauce and adjust the spices according to your personal taste. You can store the pink mayonnaise in the refrigerator in a closed container for a few days.

In Italy, pink mayonnaise can also be used to dress the classic “panino con la frittata” (frittata sandwich), adding an extra touch of color and taste.
