Pineapple Delights

Ingredients

Preparation

  1. Clean the pineapple by removing the peel and the central core. Cut the pulp into small pieces or slices, according to your preference.
  2. In a bowl, work the mascarpone with the powdered sugar and vanillin (or vanilla seeds) until you have a smooth and homogenous cream.
  3. Finely grind the biscuits and mix them with the melted butter to create a compact base.
  4. In a dessert glass or bowl, create a layer of the ground biscuit, pressing it down lightly.
  5. Dampen the biscuit layer slightly with a bit of rum or orange juice.
  6. Add a layer of mascarpone cream over the biscuits.
  7. Add the pieces of pineapple on top of the mascarpone cream.
  8. Repeat the layers as much as you like, ending with the mascarpone cream.
  9. Garnish with chocolate shavings or grated chocolate and a piece of fresh pineapple.
  10. Let it rest in the refrigerator for at least 1 hour before serving to allow the flavors to meld well together.
