Pineapple Nua Cake

The Pineapple Nua Cake is a soft and simple to make dessert, perfect for breakfast or a tasty snack. Here is the recipe to prepare it.

Ingredients

  • 3 eggs
  • 200 g of sugar
  • 300 g of 00 flour
  • 1 sachet of baking powder
  • 125 ml of seed oil
  • 125 ml of milk
  • 1 can of pineapple in syrup
  • 250 g of ricotta (optional for filling)

Preparation

  1. Take a large bowl and whisk the eggs with the sugar until you have a frothy and light mixture.
  2. Then add the oil and milk, continuing to mix to blend the ingredients well.
  3. Sift the flour with the baking powder and incorporate it into the liquid mixture, mixing from the bottom up to avoid lumps.
  4. Drain the pineapple from the syrup and cut it into slices or pieces, as you prefer, and add the pieces to the batter (in the more classic variant, the slices are placed on the bottom of the mold).
  5. If you decide to enrich the cake further, you can add a layer of sweetened ricotta in the middle layer of the batter or as a filling after baking.
  6. Butter and flour a baking pan or line it with parchment paper, then pour the batter into it.
  7. Arrange the slices or pieces of pineapple on top of the batter as desired.
  8. Bake in a pre-heated oven at 180 °C for about 40-45 minutes. The cake is ready when it has a golden appearance and passes the toothpick test.
  9. Remove the cake from the oven and let it cool before unmolding and serving.

Curiosity

The Nua Cake, which literally means “naked cake”, gets its name from the fact that it is so good that it is perfect even without the need for additional decorations or coverings. In the original version, it is often made with apples, but the addition of pineapple gives a fresh exotic note to the dessert.
