Pineapple Fritters

Pineapple fritters are a delicious and exotic way to enjoy this fruit. Here is how to prepare them in the Italian style, with a sweet and crispy touch.

Ingredients

  • 1 ripe pineapple
  • 150 grams of flour
  • 2 eggs
  • 50 grams of sugar
  • 1 sachet of baking powder for sweets
  • A pinch of salt
  • Milk as needed (the right amount to obtain a batter that is not too thin)
  • Oil for frying
  • Powdered sugar (for sprinkling at the end)

Preparation

  1. Peel the pineapple and cut it into slices about 1 cm thick, remove the hard central core.
  2. In a bowl, sift the flour with the baking powder and a pinch of salt.
  3. In another bowl, lightly beat the eggs with the sugar until you get a frothy and light mixture.
  4. Combine the egg and sugar mixture with the flour and slowly add the milk, mixing constantly until you get a smooth and lump-free batter that covers the spoon but is not too thick.
  5. Heat abundant oil in a frying pan. When it is hot (but not smoking), dip the pineapple slices in the batter to completely coat them and then fry them in the hot oil.
  6. Let the pineapple fritters brown on both sides, then drain them on paper towels to remove excess oil.
  7. Dust with powdered sugar before serving.

Pineapple fritters can be served either warm or at room temperature. For an even more Italian twist, you can also add a bit of liquor, like rum or grappa, to the batter, which helps to add an extra flavor and to make the fritter even more fragrant.
