Pineapple Cake
17/11/2023I can suggest a classic recipe for Pineapple Cake. It’s a dessert that is very appreciated for its freshness and simplicity.
Ingredients
- 150 g of sugar
- 4 eggs
- 250 g of all-purpose flour
- 1 packet of baking powder
- 1 pinch of salt
- 100 ml of vegetable oil
- 100 ml of pineapple juice (you can use the juice from a can of natural pineapple)
- 7-8 slices of canned pineapple (or natural, according to your preference)
- Powdered sugar for decorating (optional)
Preparation
- Preheat the oven to 180 °C (350 °F).
- In a large bowl, whip the eggs with the sugar until you have a frothy and light mixture.
- Slowly add the oil and the pineapple juice, continuing to mix.
- In a separate bowl, sift the flour, baking powder, and a pinch of salt.
- Gently fold in the dry ingredients into the mixture of eggs, sugar, oil, and pineapple juice, stirring with a spatula or a wooden spoon until the mixture is smooth and lump-free.
- Butter and flour (or line with parchment paper) a cake pan 22-24 cm in diameter. If you want to create a decorative effect, arrange the pineapple slices at the bottom of the pan.
- Gently pour the batter into the pan, covering the pineapple slices.
- Bake for about 40-45 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Let the cake cool in the pan for a few minutes, then invert the cake onto a serving plate so that the base with the pineapple becomes the top of the cake.
- If desired, dust with powdered sugar before serving.
