Pineapple Cake

Ingredients

  • 150 g of sugar
  • 4 eggs
  • 250 g of all-purpose flour
  • 1 packet of baking powder

  • 7-8 slices of canned pineapple (or natural, according to your preference)

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. In a large bowl, whip the eggs with the sugar until you have a frothy and light mixture.
  3. Slowly add the oil and the pineapple juice, continuing to mix.
  4. In a separate bowl, sift the flour, baking powder, and a pinch of salt.
  5. Gently fold in the dry ingredients into the mixture of eggs, sugar, oil, and pineapple juice, stirring with a spatula or a wooden spoon until the mixture is smooth and lump-free.
  6. Butter and flour (or line with parchment paper) a cake pan 22-24 cm in diameter. If you want to create a decorative effect, arrange the pineapple slices at the bottom of the pan.
  7. Gently pour the batter into the pan, covering the pineapple slices.
  8. Bake for about 40-45 minutes or until a toothpick inserted in the center of the cake comes out clean.
  9. Let the cake cool in the pan for a few minutes, then invert the cake onto a serving plate so that the base with the pineapple becomes the top of the cake.
  10. If desired, dust with powdered sugar before serving.
