Lemon Pineapple and Salmon Skewers

Lemon pineapple and salmon skewers are a perfect dish for a special occasion or for a summer aperitif. Here’s the recipe to prepare this delicious appetizer with an Italian twist.

Ingredients

  • 200 g of fresh salmon fillet
  • 1 ripe pineapple
  • 1 organic lemon
  • Extra virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • Some mint leaves for garnish (optional)

Preparation

  1. Start by cutting the salmon into cubes of about 2 cm per side, being careful to remove any bones.
  2. Clean the pineapple by removing the skin and the central core. Cut the flesh into cubes the same size as the salmon pieces.
  3. Grate the lemon zest, being careful not to grate the white part, which could be bitter. Then squeeze the juice of the lemon.
  4. In a bowl, mix the salmon cubes with the lemon juice and grated zest, a drizzle of extra virgin olive oil, salt and pepper. Leave to marinate for about 10-15 minutes in the fridge.
  5. In the meantime, prepare the skewers by alternating a cube of salmon with one of pineapple.
  6. Heat a grill or non-stick pan over medium-high heat. When it’s hot, cook the skewers for about 2 minutes on each side, or until the salmon is golden but still soft inside.
  7. Serve the skewers on a plate, garnished with fresh mint leaves and a drizzle of raw olive oil, if desired.
