Pineapple and Coconut Popsicles

Ingredients

  • 250 ml of pineapple juice, preferably fresh
  • 200 ml of coconut milk (not coconut cream, which is thicker and sweeter)
  • 50 ml of agave syrup or honey to sweeten (optional, depends on the sweetness of the pineapple and personal preferences)
  • 1 teaspoon of vanilla extract (optional)
  • Grated coconut (optional, for added texture)

Preparation

  1. In a blender, combine the pineapple juice, coconut milk, agave syrup or honey if you decide to use it, and the vanilla extract if you choose to include it. Blend until the mixture is smooth.

  2. If you wish to add grated coconut for added texture and flavor, incorporate it now and stir with a spoon.

  3. Pour the mixture into popsicle molds, leaving a little space at the top to allow the liquid to expand during freezing.

  4. Insert the popsicle sticks into the molds. If you don’t have specialized molds, you can also use plastic or paper cups with wooden sticks or ice cream spoons.

  5. Place the molds in the freezer and leave them until they are completely solidified, typically this takes about 4-6 hours, but it’s best to leave them overnight.
