Pumpkin and Fossa Pecorino Pinched Bundles

Ingredients

  • 250 g of flour
  • 2 eggs
  • 300 g of cleaned pumpkin
  • 100 g of fossa pecorino cheese (or another aged pecorino if not available)
  • Salt to taste
  • Black pepper to taste
  • Nutmeg to taste
  • Extra virgin olive oil
  • Butter to taste
  • Fresh sage

Preparation

  1. Start by preparing the fresh pasta by kneading the flour with the eggs until you obtain a smooth and homogeneous mixture. Form a ball, cover it with cling film, and let it rest for at least 30 minutes.

  2. In the meantime, cook the pumpkin. You can steam it, roast it, or boil it until it becomes soft. Once cooked, mash it with a potato masher or blend it to get a smooth puree.

  3. Season the pumpkin puree with salt, black pepper, and grated nutmeg. Add grated fossa pecorino and mix well until the ingredients are combined into a homogenous filling.

  4. Roll out the fresh pasta into thin sheets and cut into squares of about 7 cm on each side. Place a teaspoon of filling in the center of each square.

  5. Pinch the four corners of the squares towards the center to form the bundles, making sure to seal the edges well to prevent the filling from escaping during cooking.

  6. Bring a pot of salted water to a boil and cook the bundles for about 3-4 minutes or until they float to the surface.

  7. Prepare a simple seasoning by heating some butter in a pan with a few fresh sage leaves until it becomes frothy and slightly golden.

  8. Gently drain the bundles and transfer them to the pan with the melted butter and sage. Toss them for a minute to flavor them well.

  9. Serve the hot bundles, with an additional sprinkle of grated fossa pecorino and a pinch of black pepper.
