Pie pops

Pie pops are little pies on a stick that can be considered as the sweet cousins of the more well-known cake pops. They can be prepared with various fillings, such as jam, chocolate, or fruit. Here is how to prepare them, with an Italian twist:

Ingredients

  • 2 rolls of puff pastry (or, if you prefer to make it at home, 300g of flour, 150g of butter, a pinch of salt, and enough cold water)
  • Filling of choice (for example, apricot jam, Nutella, or pistachio cream)
  • 1 egg (for glazing)
  • Granulated sugar (to decorate)
  • Lollipop sticks or wooden skewers
  • Cookie cutters of choice (heart, star, circle, etc.)

Preparation

  1. If you make the puff pastry at home, start by mixing flour and cold butter cut into pieces until you obtain a sandy mixture. Add a pinch of salt and enough cold water to form a compact ball. Wrap in plastic wrap and let rest in the refrigerator for at least 30 minutes.

  2. Preheat the oven to 180° C.

  3. Roll out the puff pastry until it is about 3mm thick. Use the cookie cutters to cut the dough into equal shapes.

  4. Place half of the cut shapes on a baking tray lined with parchment paper. In the center of each, place a bit of filling, making sure to leave a border all around.

  5. Lightly moisten the edge of each shape with a bit of water, so as to better seal the pie pop.

  6. Gently place a stick in the center of each pie, over the filling.

  7. Cover with the other halves of the pastry shapes, pressing the edges well to seal them. You can use the tines of a fork to seal better and give a decorative look to the edges.

  8. Beat the egg and brush the pie pops to get a perfect glaze after baking.

  9. Sprinkle the pie pops with granulated sugar, adding crunchiness and a sweet finish.

  10. Bake the pie pops for about 15-20 minutes or until the puff pastry is golden and crisp.

  11. Remove from the oven and let them cool completely before serving.
