Piadina with Turkey and Guacamole

I can show you how to prepare a tasty piadina with turkey and guacamole. This dish combines the tradition of Italian piadina with flavors reminiscent of Mexican cuisine.

Ingredients

  • 2 piadinas (you can buy them ready-made or prepare them yourself)
  • 200 g of sliced turkey breast
  • 2 ripe avocados
  • 1 ripe tomato
  • 1 small red onion
  • Juice of 1 lime
  • A pinch of salt
  • Black pepper to taste
  • Extra virgin olive oil
  • Salad (such as lettuce or iceberg) to taste

Preparation

  1. Start by preparing the guacamole. Cut the avocados in half, remove the pit, and scoop out the flesh with a spoon. Mash the avocado pulp with a fork until it becomes creamy.
  2. Immediately add the lime juice to prevent the avocado from browning. Dice the tomato and red onion into very small pieces and incorporate them into the avocado.
  3. Add a pinch of salt and pepper to the guacamole and mix everything together. If you like, you can also add some chopped cilantro for an extra kick of flavor.
  4. Heat the piadinas in a pan until they become slightly crispy but still soft and pliable.
  5. Place some salad leaves on the warm piadina, then add the sliced turkey and distribute a generous amount of guacamole on top.
  6. Roll up the piadina with the filling or fold it in half, as you prefer.

If you wanted an even more Italian touch, you could add slices of fresh mozzarella inside the piadina or a sprinkling of Parmigiano-Reggiano over the guacamole before closing the piadina.
