Piadina with Shrimp, Zucchini Flowers, and Salad

Ingredients
For the Piadinas (if you want to make them at home):
- 500 g of flour
- 200 ml of water
- 50 g of lard or extra virgin olive oil
- 1 teaspoon of salt
- 1 teaspoon of baking soda (optional)
For the Filling:
- 200 g of cleaned shrimp
- 100 g of zucchini flowers
- Mixed salad as needed
- Extra virgin olive oil
- 1 clove of garlic
- Salt and pepper to taste
- Lemon juice
Preparation
If you’re making the piadinas:
- In a large bowl, mix the flour with the salt and baking soda.
- Add the lard or oil and start to blend.
- Gradually pour in the water as well and knead until smooth and even.
- Let the dough rest covered for about 30 minutes.
- Divide the dough into balls and roll out each ball into disks about 3 mm thick.
- Cook the piadinas one at a time on a griddle or non-stick pan, flipping when bubbles form and making sure they are golden brown on both sides.
For the filling:
- Clean the shrimp by removing the head, shell, and intestine, then wash them.
- Heat a drizzle of extra virgin olive oil and a clove of garlic in a pan, then sauté the shrimp for a few minutes, until they turn pink and are cooked. Season with salt and pepper.
- Deglaze with a bit of lemon juice and remove from the heat.
- In another pan, quickly toss the zucchini flowers with a drizzle of oil, just enough to soften them. They should not fall apart but remain slightly crispy.
- Wash and dry the salad.
- Assemble the piadina: place some salad on each piadina, add a few shrimp and two or three zucchini flowers.
- Roll or fold the piadina and serve immediately.
Fun Fact
The Romagna piadina is a much-loved Italian street food, traditionally consumed with squacquerone and prosciutto crudo, but it lends itself very well to multiple creative interpretations like the one we just explored. You can play with the fillings and textures to create your favorite version!
