Piadina with Sausage and Stewed Onions
17/11/2023Here’s the recipe to prepare a delicious Piadina with Sausage and Stewed Onions!
Ingredients
- 4 Piadinas (you can buy ready-made ones or prepare them at home)
- 4 pork sausages
- 2 large onions
- Extra virgin olive oil as needed
- Salt as needed
- Pepper as needed
- Lard or extra virgin olive oil for cooking the piadinas (if homemade)
For homemade piadinas (optional):
- 500 g of flour
- 200 ml of warm water
- 2 tablespoons of lard (or extra virgin olive oil)
- 10 g of salt
Preparation
- If you decide to prepare the piadinas at home, mix the flour with the lard or oil, salt, and warm water until you get a smooth and elastic dough. Let it rest covered for about 30 minutes.
- In the meantime, clean and slice the onions into thin strips and stew them in a pan with a drizzle of extra virgin olive oil, salt, and pepper. Cook on low heat until they become soft and translucent. If necessary, add a little water to prevent them from burning.
- Remove the skin from the sausages and crumble them with the help of a fork. Cook them in a pan until they are well browned. You could also add them to the onions to further flavor them once the onions are almost stewed.
- Roll out the dough for the piadinas into discs about 20 cm in diameter and about 2-3 mm thick, if you have chosen to make them at home.
- Cook the piadinas in a hot non-stick pan, grease the pan with a little lard or extra virgin olive oil, turning them on both sides until they are slightly golden and puffy.
- Place some sausage and stewed onions on half of each piadina, fold in half and serve hot.
I recommend pairing this piadina with a nice glass of Sangiovese di Romagna, which with its robust taste goes very well with the intense flavor of the sausage and the sweetness of the onions.
