Piadina with Sausage and Stewed Onions

Here’s the recipe to prepare a delicious Piadina with Sausage and Stewed Onions!

Ingredients

  • 4 Piadinas (you can buy ready-made ones or prepare them at home)
  • 4 pork sausages
  • 2 large onions
  • Extra virgin olive oil as needed
  • Salt as needed
  • Pepper as needed
  • Lard or extra virgin olive oil for cooking the piadinas (if homemade)

For homemade piadinas (optional):

  • 500 g of flour
  • 200 ml of warm water
  • 2 tablespoons of lard (or extra virgin olive oil)
  • 10 g of salt

Preparation

  1. If you decide to prepare the piadinas at home, mix the flour with the lard or oil, salt, and warm water until you get a smooth and elastic dough. Let it rest covered for about 30 minutes.
  2. In the meantime, clean and slice the onions into thin strips and stew them in a pan with a drizzle of extra virgin olive oil, salt, and pepper. Cook on low heat until they become soft and translucent. If necessary, add a little water to prevent them from burning.
  3. Remove the skin from the sausages and crumble them with the help of a fork. Cook them in a pan until they are well browned. You could also add them to the onions to further flavor them once the onions are almost stewed.
  4. Roll out the dough for the piadinas into discs about 20 cm in diameter and about 2-3 mm thick, if you have chosen to make them at home.
  5. Cook the piadinas in a hot non-stick pan, grease the pan with a little lard or extra virgin olive oil, turning them on both sides until they are slightly golden and puffy.
  6. Place some sausage and stewed onions on half of each piadina, fold in half and serve hot.

I recommend pairing this piadina with a nice glass of Sangiovese di Romagna, which with its robust taste goes very well with the intense flavor of the sausage and the sweetness of the onions.
