Piadina Nachos

Piadina nachos are a tasty dish that blends the tradition of Italian cuisine with the Tex-Mex aroma of classic nachos. Here’s how to prepare an Italian version of this snack:

Ingredients

  • 2-3 piadinas (depending on size)
  • Extra virgin olive oil to taste
  • Salt to taste
  • Sweet paprika to taste (optional)
  • 100g of cheddar cheese or another well-melting cheese, grated
  • 100g of grated mozzarella cheese
  • Spicy tomato salsa to taste
  • Guacamole (you can prepare it with ripe avocado, lemon juice, salt, and chili pepper, blending everything)
  • Black or red cooked beans (optional)

Preparation

  1. Preheat the oven to 180 °C (356 °F).
  2. Cut the piadinas into triangles similar to nachos and arrange them on a baking sheet lined with parchment paper.
  3. Lightly brush the piadina triangles with extra virgin olive oil and sprinkle with a pinch of salt and, if you like, a bit of sweet paprika.
  4. Bake the piadinas for about 5-8 minutes or until they start to brown and become crispy. Make sure not to burn them, so keep an eye on the oven.
  5. Once the piadina triangles are crispy, remove the tray from the oven.
  6. In a large tray or an oven-friendly baking dish, create a first layer of piadina nachos, then cover with half of the cheddar and mozzarella cheeses.
  7. Add a second layer of nachos, and then the rest of the cheese.
  8. If you wish to add beans, distribute them on the cheese before adding the second layer of piadina.
  9. Put back in the oven until the cheese has melted and starts to brown, about another 5-10 minutes.
  10. Remove from the oven and serve immediately with spicy salsa and guacamole on the side.
