Piadina Baskets with Salad

Here is a delicious recipe to create piadina baskets with salad, a fresh and versatile dish perfect for a light lunch or a tasty appetizer.

Ingredients

  • Piadine (quantity depends on how many baskets you want to prepare)
  • Mixed salad (as much as you like)
  • Cherry tomatoes (as much as you like)

Preparation

  1. Preheat the oven to 180 °C.
  2. Place the piadine one at a time over an upside-down, heat-resistant bowl, gently shaping them to create a basket form. If you want to add crispiness, sprinkle some grated cheese over the piadine before baking.
  3. Put the bowls with piadine in the oven and cook until they turn golden and crispy, about 8-10 minutes. Be careful not to burn them.
  4. In the meantime, prepare the salad. Wash and dry the mixed salad well, cut the cherry tomatoes in half, drain the corn, and cut the olives and cheese into small pieces.
  5. In a large bowl, mix the salad with cherry tomatoes, corn, olives, and cheese. Season with extra virgin olive oil, salt, and balsamic vinegar or lemon juice to your liking.
  6. Once the piadina baskets are ready and have cooled down a bit, fill them with the previously seasoned salad.
  7. Serve immediately to keep the baskets crispy.
