Piadina Baskets with a Trio of Salads
17/11/2023The piadina baskets with a trio of salads are a delicious and original appetizer, combining the Italian tradition of Romagna piadina with the freshness of various salads. Here is the recipe, with typical Italian details:
Ingredients
- 4 Romagna piadinas
- Extra virgin olive oil
- Salt and pepper to taste
For the trio of salads:
- Mixed salad (lettuce, arugula, baby spinach, etc.)
- Cherry tomatoes
- Corn
- Pitted black olives
- Canned tuna
- Cannellini beans
- Carrots
- Celery
- Red onion
- Balsamic vinegar
- Salt and pepper to taste
- Dried oregano to taste
For the presentation, you can use three different salads of your choice, such as:
- Greek salad
- Tuna salad with red onion and cannellini beans
- Carrot, celery, and corn salad
Preparation
- Take bowls of the size you wish for your baskets and invert them on a baking tray covered with parchment paper.
- Lightly grease both the bowls and both sides of the piadinas with extra virgin olive oil.
- Gently lay the piadinas over the inverted bowls, shaping them so that they take the form of baskets. You can use dried beans or chickpeas inside to maintain the shape during baking.
- Bake in a preheated oven at 180 °C (356 °F) for about 5-10 minutes, or until the baskets become crispy.
- In the meantime, prepare the trio of salads. Wash and cut all the vegetables, then season them separately with oil, balsamic vinegar, salt, pepper, and oregano to taste.
- Drain the tuna and cannellini beans, and cut the olives and cherry tomatoes in half.
- Mix the ingredients of the different salads in three bowls.
- Once the piadina baskets are ready, let them cool before carefully removing them from the bowls.
- Finally, fill each basket with one of the three prepared salads.
Serve the piadina baskets as an appetizer or as a main dish for a light lunch. They are excellent accompanied by a glass of chilled white wine, perhaps a Trebbiano or Verdicchio.
Curiosity
The piadina baskets can be a fun way to serve salad and, at the same time, a great opportunity to experiment with different flavor combinations. In Romagna, the piadina is a true symbol of conviviality and versatility.
