Phyllo Pastry Rolls with Shrimp and Spinach

Ingredients

  • 200 g of cleaned shrimp
  • 200 g of fresh spinach
  • 4 sheets of phyllo pastry
  • 2 cloves of garlic

  • Extra virgin olive oil
  • Lemon juice

Preparation

  1. Start with preparing the spinach. Wash them well and cook them quickly in a pan with a drizzle of oil and whole garlic cloves, then remove them once they are golden. Once the spinach has softened, drain and squeeze out the excess water.
  2. In the same pan, sauté the shrimp with a drizzle of oil, salt, pepper, and a bit of lemon juice until they turn pink. At the end of cooking, add the chopped parsley if you want an extra aromatic touch.
  3. Prepare the phyllo dough. Carefully lay out a sheet of phyllo and brush it lightly with melted butter or oil. Overlap another sheet of phyllo and repeat the operation until all four sheets are stacked.
  4. Mix the spinach with the shrimp and crumbled feta cheese. Adjust with salt and pepper.
  5. Cut the excess phyllo pastry into squares or rectangles (about 15 x 15 cm).
  6. Put some of the spinach, shrimp, and cheese filling in the center of each square.
  7. Wrap the phyllo around the filling, folding the edges inward to form the rolls.
  8. Arrange the rolls on a baking tray lined with parchment paper and brush the surface of each with a bit of melted butter or oil.
  9. Bake in a preheated oven at 180 °C for about 15-20 minutes or until golden.
  10. Serve them hot, possibly with a garnish of fresh salad or a sauce of your choice.
