Filo Pastry Pie with Ricotta and Chocolate

The filo pastry pie with ricotta and chocolate is a delicious dessert that combines the crispness of filo pastry with the sweetness of the ricotta and chocolate. Here is the recipe to prepare this dessert that could be called a meeting between Greek cuisine, with its filo dough, and Sicilian, with its stuffing similar to that of cassata.

Ingredients

  • 1 packet of filo pastry (about 12 sheets)
  • 500 g of sheep’s milk ricotta (for a richer and more traditional flavor)
  • 120 g of granulated sugar
  • 1 sachet of vanillin or the seeds of a vanilla bean
  • 100 g of chocolate chips or chopped chocolate
  • 100 g of melted butter
  • Powdered sugar (for decorating)
  • Grated zest of an orange or lemon (optional)

Preparation

  1. First of all, make sure the ricotta is well-drained. You can put it in a colander with a weight on top and leave it to drain for a few hours in the refrigerator.

  2. Once drained, put the ricotta in a bowl, add the sugar, vanillin or vanilla seeds, and grated orange or lemon zest if you wish. Mix well until you get a smooth cream.

  3. Gently fold the chocolate chips or chopped chocolate into the ricotta cream.

  4. Take a baking pan (usually round) and brush it with a little melted butter. Then take a sheet of filo pastry, brush it with butter and lay it gently on the bottom of the pan. Let the edges hang over the sides of the pan a bit.

  5. Repeat the process, layering multiple sheets of filo pastry, each brushed with butter, rotating each sheet at a different angle to cover the pan evenly.

  6. After you’ve used about half of the sheets, distribute the ricotta cream in the center.

  7. Continue layering and brushing the remaining filo pastry sheets.

  8. Fold the edges of the filo pastry inward to close the pie, brushing the last fold with butter as well.

  9. Bake in a preheated oven at 180 °C for about 30-40 minutes or until the filo pastry is nicely golden and crispy.

  10. Remove from oven and let the pie cool. Before serving, dust with powdered sugar.
