17/11/2023Parmesan Ghost Tartlets are a tasty and fun appetizer, perfect for themed parties such as Halloween or to add a touch of originality to an aperitif. Here’s how to prepare this dish.
Ingredients
- 100 g of grated Parmesan cheese
- 200 g of flour 00
- 100 g of cold butter, cubed
- 1 egg
- Salt to taste
- Pitted black olive
For decoration:
- Mozzarella for pizza
- Black olives
Preparation
- In a bowl, mix the flour and grated Parmesan adding a pinch of salt.
- Add the cubed butter and start to knead with your fingertips until you get a sandy mixture.
- Incorporate the egg and continue to work the dough until it is smooth and uniform.
- Form a ball with the dough, wrap it in cling film and let it rest in the refrigerator for about 30 minutes.
- Once rested, roll out the dough on a lightly floured surface until about 3 mm thick.
- With a round pastry cutter, cut out discs and place them inside the pre-buttered and floured tartlet molds.
- Prick the bottom of the tartlets with the tines of a fork, and bake in a preheated oven at 180 °C for about 10-15 minutes or until golden.
- While the tartlet bases cool down, cut the pizza mozzarella into slices and then into small rectangles.
- Place a rectangle of mozzarella on each tartlet to recreate the appearance of a ghost’s sheet.
- Cut the black olives in half to create the ghost’s eyes and place them on the mozzarella.
Tip: for a more “spooky” effect, you can use a ghost-shaped cutter to cut the mozzarella, and using a straw, make holes for the eyes.
