Ingredients
- Egg lasagna (fresh or dry that need cooking)
- Genovese Pesto
- Béchamel
- Butter
- Grated Parmesan cheese

- (optional) Chopped green beans
Preparation
- If you’re using dry lasagna, cook it in boiling salted water following the package instructions, then drain and place them on a clean cloth to dry. If you’re using fresh lasagna, you can use it directly.
- If you don’t already have the pesto ready, make it by blending basil, garlic, pine nuts, Parmesan, Pecorino, and extra virgin olive oil in a food processor until it becomes a creamy sauce.
- Make a classic béchamel by melting some butter in a saucepan, adding flour and cooking until golden brown. Then slowly add hot milk, stirring continuously to avoid lumps, until you achieve a thick and smooth cream. Season with salt, pepper, and nutmeg to taste.
- Lightly butter the bottom of a baking dish and lay down a first layer of lasagna pasta.
- Spread a layer of béchamel, a few tablespoons of pesto, and sprinkle with grated Parmesan. If you like, you can also add boiled potatoes and green beans.

- Bake in a pre-heated oven at 180 °C (356 °F) for about 30 minutes or until the surface is golden and crispy.
