  4. Add the salt and knead for a few more minutes.
  5. Form a ball with the dough, place it in a lightly oiled bowl and let it rise covered in a warm place, away from drafts, for about 2 hours or until it doubles in volume.
  6. Once the dough has risen, turn it out onto a work surface and roll it into a rectangle using a rolling pin.
  7. Spread the Genovese pesto evenly over the surface of the dough, leaving a small border around the perimeter.
  8. Roll up the dough starting from the long side to create a log. Make sure to seal the edge well.
  9. Cut the log into slices about 3-4 cm thick.
  10. Arrange the slices on a baking tray lined with parchment paper, leaving some space between each one. Cover with a kitchen towel and let it rise for another 30-40 minutes.
  11. Beat the remaining egg and brush the surface of the brioche bread.

  13. Preheat the oven to 180 °C.
