Persimmon Cake

Persimmon cake is a delicious autumnal dessert that celebrates the sweet flavor and velvety texture of this fruit. Here is a simple recipe that you can follow to make a persimmon cake:

Ingredients

  • 2 ripe persimmons
  • 200 g of flour
  • 150 g of sugar
  • 3 eggs
  • 100 ml of seed oil
  • 1 packet of baking powder for desserts
  • 1 pinch of salt
  • Icing sugar for decorating (optional)

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Peel the persimmons and blend them until you get a puree.
  3. In a bowl, beat the eggs with the sugar until the mixture is light and frothy.
  4. Add the oil in a thin stream while continuing to beat.
  5. Incorporate the persimmon puree into the egg and sugar mixture.
  6. Add the sifted flour, baking powder, and pinch of salt, mixing gently to avoid lumps.
  7. Pour the batter into a buttered and floured cake pan, or one lined with parchment paper.
  8. Bake for about 40 minutes or until a toothpick inserted in the center of the cake comes out clean.
  9. Let the cake cool before removing it from the cake pan.
  10. Dust with icing sugar before serving, if you wish.
