Peppers in oil
17/11/2023Peppers in oil are a traditional Italian side dish or appetizer, perfect for enjoying on bruschetta or as an accompaniment to meat or cheese dishes.
Ingredients
- Red and/or yellow peppers (the amount depends on how much you want to prepare)
- White wine vinegar
- Garlic
- Oregano
- Salt to taste
- Sugar (a pinch)
- Extra virgin olive oil
Preparation
- Wash the peppers, remove the stem and internal seeds, and cut them into strips about 1 cm wide.
- Place the peppers in a pot and cover them with water, add a pinch of sugar, a pinch of salt, and a glass of white wine vinegar.
- Bring to a boil and let boil for about 10 minutes.
- In the meantime, sterilize the glass jars in which you will preserve the peppers by immersing them in boiling water for a few minutes.
- Drain the peppers and let them dry on a clean cloth.
- Fill the jars with the peppers, adding a few slices of thinly sliced garlic and oregano to taste between layers.
- Completely cover the peppers in the jars with abundant extra virgin olive oil up to 1 cm from the rim of the jar.
- Close the jars well and store them in a cool, dry place for at least 3 weeks before consuming to allow the flavors to meld well.
Curiosity
In addition to being very tasty, peppers in oil also retain many of the nutritional properties of fresh peppers such as vitamins and antioxidants. It’s important to ensure that the oil completely covers them to prevent mold formation and to extend their shelf life.
