Sandwich with Peppers and Eggs

A sandwich with peppers and eggs is a great choice for a hearty meal full of flavor. Here’s how you could prepare it with an Italian twist:

Ingredients

  • 2 wholegrain rolls or ciabattas
  • 2 red bell peppers
  • 4 fresh eggs
  • 2 tablespoons of extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 clove of garlic
  • Fresh arugula or spinach for garnish
  • Goat cheese or ricotta, optional
  • Aromatic herbs as desired (basil, oregano)

Preparation

  1. Start by washing the peppers, cutting them into strips, and removing the seeds.
  2. Sauté the garlic in a pan with the extra virgin olive oil and, once golden, remove it.
  3. Add the pepper strips to the pan and cook until they are soft and slightly caramelized. Season with salt and pepper to taste.
  4. In another pan, pan-fry the eggs, trying to keep them as intact as possible. Season with salt and pepper to taste.
  5. Open the rolls or ciabattas and lightly toast them in the oven or on a grill.
  6. Spread a thin layer of goat cheese or ricotta on the bread, if desired.
  7. Then place a bed of fresh arugula or spinach, on top the cooked peppers, and finally an egg on each half of the sandwich.
  8. If desired, add freshly finely chopped aromatic herbs.
  9. Close the sandwiches and serve immediately.
