Penne with Salmon
17/11/2023The recipe for Penne with Salmon is a classic of Italian cuisine, a tasty combination of pasta and smoked fish, enriched by a creamy pink sauce. Here’s how to prepare it:
Ingredients
- 320 g of penne rigate
- 200 g of smoked salmon
- 200 ml of cooking cream
- 1/2 glass of vodka (optional)
- 1 small onion
- Extra virgin olive oil
- Salt
- Black pepper
- A sprig of fresh dill (optional)
Preparation
-
Bring a pot of salted water to a boil to cook the penne. Once the water is boiling, cook the penne according to the package instructions for al dente.
-
In the meantime, finely chop the onion and slice the smoked salmon into strips.
-
Heat a drizzle of extra virgin olive oil in a pan and sauté the onion until it becomes translucent.
-
Add the smoked salmon and let it flavor for a couple of minutes, then deglaze with the vodka if you have decided to use it.
-
After the alcohol has evaporated, lower the flame and add the cream. Stir gently and let it cook for a few minutes, adjusting with salt and pepper. If you wish, you can add some pasta cooking water to make the sauce lighter.
-
When the penne is ready, drain and transfer them directly into the pan with the salmon sauce, mixing well so that the pasta is evenly seasoned.
-
Serve the penne with salmon piping hot, garnishing with chopped fresh dill for an extra touch of color and flavor.
Curiosity
The vodka in this recipe, although an optional ingredient, plays a key role in balancing the flavors and intensifying the aroma of the salmon. Don’t worry about the alcohol, which will evaporate during cooking, leaving a richer and deeper taste.
I hope you enjoy this recipe and bon appétit!
