Penne with Perch, Calamari, and Shrimp
17/11/2023Here’s a tasty recipe for penne with perch, calamari, and shrimp, a true delight that combines the best of seafood products. You’ll need some fresh ingredients to make this dish if you don’t already have them at hand.
Ingredients
- 350 grams of penne
- 200 grams of perch fillets
- 200 grams of calamari
- 200 grams of peeled shrimp
- 2 cloves of garlic
- Extra virgin olive oil
- Chopped parsley
- Salt to taste
- Pepper to taste
- 1/2 glass of white wine
- Cherry tomatoes (optional)
Preparation
- Clean the fish: for the calamari, remove the interior and the outer skin and cut them into rings; fillet the perch and cut it into not too small pieces; clean the shrimp by peeling them, if necessary.
- Put a pot with plenty of salted water on the heat for the pasta.
- In a large pan, sauté the garlic cloves in extra virgin olive oil until golden. Remove the garlic and add the calamari. Sauté for a couple of minutes.
- Add the shrimp and perch pieces and let them cook for a few minutes, then deglaze everything with the white wine and let the alcohol evaporate on high heat.
- If you decide to use them, add the halved cherry tomatoes and let the sauce cook for about 5-10 minutes, adjusting with salt and pepper. The sauce should remain fairly liquid.
- In the meantime, cook the penne in the pot of boiling water following the package instructions to achieve al dente texture.
- Drain the pasta and transfer it to the pan with the fish sauce, mixing well to blend the flavors.
- Finish with chopped parsley and, if you like, a drizzle of raw extra virgin olive oil.
