Ingredients

  • 320 g of penne rigate
  • 200 g of shelled and cleaned shrimp
  • 200 ml of cooking cream
  • 1 packet of saffron powder (or some stigmas, if you prefer)
  • 2 cloves of garlic
  • Extra virgin olive oil (to taste)
  • Salt (to taste)
  • Black pepper (to taste)
  • Chopped parsley (optional, for garnish)
  • White wine (a splash for deglazing the shrimp, optional)

Preparation

  1. In a large pan, heat a drizzle of extra virgin olive oil and add the garlic cloves, letting them brown slightly.

  2. Add the shrimp to the pan and sauté over high heat. If desired, you can deglaze with a splash of white wine until evaporated.

  3. Meanwhile, bring a pot of salted water to a boil and cook the penne rigate according to the package instructions to achieve al dente pasta.

  4. Dissolve the packet of saffron in a little hot water. If using stigmas, let them steep in a little hot water for about 10 minutes.

  5. Add the cooking cream to the shrimp and allow it to heat up, then add the dissolved saffron and stir to evenly incorporate the color and flavor. Adjust seasoning with salt and pepper.

  6. Drain the al dente penne and transfer them to the pan with the shrimp and saffron sauce. Toss everything together for a couple of minutes to absorb the flavors.

  7. Plate the penne and, if desired, garnish with chopped parsley for a touch of freshness.
