Penne with Calamari, Cherry Tomatoes, and Orange

Ingredients
- 320 g of penne
- 400 g of cleaned calamari, cut into rings
- 250 g of cherry tomatoes
- 1 organic orange (for the zest and juice)
- 2 cloves of garlic
- A bunch of fresh parsley
- Extra virgin olive oil to taste
- Salt and pepper to taste
Preparation
- In a large pan, heat a stream of extra virgin olive oil and add the peeled garlic cloves, letting them lightly brown.
- Add the calamari rings to the pan and sauté over high heat for a few minutes until they become white and slightly translucent. Don’t overcook them to avoid becoming rubbery. Season with salt and pepper to taste.
- Add the cherry tomatoes cut in half and let them wilt together with the calamari, adding a pinch of salt.
- Meanwhile, grate the zest of the orange, avoiding the white part which is bitter, and squeeze its juice.
- Cook the penne in plenty of salted water following the cooking time indicated on the package to ensure they are al dente.
- Add the grated zest and juice of the orange to the calamari and cherry tomatoes, letting the flavors infuse for a few minutes on low heat.
- Drain the pasta and transfer it to the pan with the sauce, setting aside some of the cooking water.
- Toss the penne with the sauce, adding a little bit of the cooking water if necessary to make it creamier.
- Turn off the heat and add the chopped parsley, mixing well to distribute it evenly.
- Serve hot with a sprinkle of fresh pepper, if desired.
