Penne with bell peppers, cream, and curry

Penne with bell peppers, cream, and curry are a flavorful and easy-to-make dish. I will provide you with a basic recipe that you can customize to your taste. If you do not have “Penne” pasta, you can use another type of short pasta if you prefer.

Ingredients

  • 350 g of penne
  • 2 bell peppers (red and yellow for color)
  • 200 ml of cooking cream
  • 1 teaspoon of curry powder
  • 1 clove of garlic
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • Grated Parmesan (optional)
  • (Optional) chopped parsley for garnish

Preparation

  1. Begin by cleaning the bell peppers, removing the seeds and white filaments, then cut them into strips or cubes.

  2. In a large pan, heat a drizzle of extra virgin olive oil and add a clove of garlic. Let the garlic brown for a few minutes, then remove it.

  3. Add the cut bell peppers to the pan and let them cook over medium heat for about 10-15 minutes, or until they have softened. If necessary, add a little water to prevent them from sticking to the bottom.

  4. Once the bell peppers are cooked, add the cooking cream and curry powder. Stir well and let the cream warm up without coming to a boil. Adjust with salt and pepper.

  5. Meanwhile, bring a pot of salted water to a boil and cook the penne according to the package instructions until al dente.

  6. Drain the pasta and transfer it to the pan with the bell pepper, cream, and curry sauce. Toss everything together for a minute or two, so the pasta absorbs the sauce.

  7. Serve immediately, garnishing with grated Parmesan as desired or, if you prefer a fresh touch, some chopped parsley.

This recipe is very versatile and can be adapted to different dietary needs. For example, if you cannot consume dairy, you might substitute the cooking cream with a vegetable-based version made from soy or oat. Also, if you are vegetarian, make sure to omit any meat products from similar recipes, such as the addition of bacon or sausage.

Enjoy your meal!
