Sliced Baked Potatoes
17/11/2023Sliced baked potatoes are a delicious dish and an excellent side that pairs well with many main courses. Let’s look at the recipe together.
Ingredients
- 4 large potatoes of equal size
- 2 tablespoons of extra virgin olive oil
- 2 cloves of garlic
- A few sprigs of fresh rosemary
- Salt, to taste
- Black pepper, to taste
- Optionally, grated Parmesan cheese or other aromatic herbs to taste
Preparation
- Prepare the oven: Preheat the oven to 220 °C.
- Clean the potatoes: Wash and dry the potatoes, then create thin slices along each potato, being careful not to cut all the way through, so that they stay attached at the base.
- Season the potatoes: Mix extra virgin olive oil, chopped garlic, aromatic herbs (chopped rosemary), salt, and freshly ground black pepper in a bowl. Use a kitchen brush to spread this mix between the slices of the potatoes.
- Cooking: Place the potatoes on a baking tray lined with parchment paper and bake for about 60-70 minutes or until the outside is crispy and the inside is soft and flaky.
- Serving: If you like, in the last few minutes of cooking, you can add grated Parmesan cheese on top of the potatoes to create a golden and tasty crust.

The technique of slicing the potatoes without completely separating them is called “hasselback” and it’s a method that allows the potatoes to cook more evenly, absorb the seasonings better and become crispy on the outside while remaining soft on the inside.
