Ingredients

  • 80 g of granulated sugar
  • 1/2 liter of water

  • 1 teaspoon of butter

Preparation

  1. Start by preparing the pears. Peel them, cut the base so that they can stand and, if you prefer, remove the core with a corer. In a pot large enough to contain the pears, bring to a boil the water with the granulated sugar, cinnamon, and lemon peel. Immerse the pears in the pot and let them cook on low heat for about 20-30 minutes or until they are tender but not mushy. Once cooked, remove them from the liquid and set aside.

  2. Now prepare the salty caramel. In a small saucepan, melt the sugar for the caramel over medium heat, until it is completely dissolved and has taken on an amber color. Be careful not to burn it. Remove from the heat and carefully add the fresh cream (watch out for splashes), stirring continuously. Then add a teaspoon of butter and a pinch of coarse salt, mix well until the caramel is smooth and even.

  3. Melt the dark chocolate in a double boiler or in the microwave. If using a double boiler, make sure the water does not touch the bottom of the bowl with the chocolate. If using the microwave, melt the chocolate in 20-30 second intervals to prevent it from burning.
