Pear and Cinnamon Tart

Ingredients
- 250 g of type 00 flour
- 125 g of cold butter, cubed
- 125 g of sugar
- 1 egg
- 1 yolk (for the shortcrust pastry)
- A pinch of salt
- Grated zest of 1 lemon
- 3-4 ripe but firm pears
- 1 teaspoon of ground cinnamon
- Icing sugar (for decoration, optional)
- 1 egg (for brushing, optional)
- Apricot jam or another type to taste (about 150 g, for spreading on the base)
Preparation
- Start with the shortcrust pastry: in a large bowl, mix the flour with the sugar, lemon zest, and a pinch of salt. Add the cold, cubed butter and blend the flour with the butter, working with your fingertips.
- When the mixture is well blended, create a well and add the egg and yolk in the center. Work the ingredients quickly until you obtain a smooth and compact dough.
- Wrap the shortcrust pastry in cling film and let it rest in the refrigerator for about 30 minutes.
- In the meantime, peel the pears, remove the core, and cut them into thin slices. Sprinkle them with cinnamon and mix gently.
- Preheat the oven to 180 °C (350 °F).
- Roll out the shortcrust pastry on a lightly floured surface, creating a disk that can cover the base and sides of a tart pan (usually about 24 cm in diameter).
- Spread a thin layer of jam on the shortcrust pastry base inside the pan, helping to balance the flavors and add an extra touch of sweetness.
- Arrange the pear slices neatly on top, covering the entire surface.
- If you wish, you can brush the edge of the shortcrust pastry with a little beaten egg to give it a golden color during baking.
- Bake the tart for about 35-40 minutes or until the pastry is golden and the pears are soft.
- Remove the tart from the oven, let it cool, and then sprinkle with icing sugar before serving.
