Cake with Pears and Amaretti

The pear and amaretti cake is a delicious dessert that combines the sweetness of pears with the distinctive taste of amaretti. Here is the recipe:

Ingredients

  • 3 ripe pears, but still firm
  • 150 g of amaretti
  • 200 g of all-purpose flour
  • 100 g of sugar
  • 100 g of soft butter
  • 3 eggs
  • 1 packet of baking powder
  • A pinch of salt
  • Powdered sugar for decorating (optional)

Preparation

  1. Prepare the pears. Peel them, cut them in half, remove the core and cut them into slices not too thin.

  2. In a bowl, crumble the amaretti leaving some larger pieces to add texture.

  3. In a large bowl, beat the butter with the sugar until you have a creamy mixture. Add the eggs, one at a time, continuing to beat.

  4. Gently fold in the flour, baking powder, and a pinch of salt to the egg and butter mixture.

  5. Add the crumbled amaretti to the batter and gently stir to evenly distribute them.

  6. Butter and flour a baking pan and pour the batter into it.

  7. Arrange the pear slices on top of the batter, pressing them in slightly so they sink a little.

  8. Bake in a preheated oven at 180°C (356°F) for about 40 minutes or until a toothpick inserted into the center of the cake comes out clean.

  9. Allow the cake to cool in the pan before unmolding and, if desired, dust it with powdered sugar before serving.

This cake is excellent as both a dessert after a meal and as a snack, possibly accompanied by a good tea or coffee. Amaretti are a typical Italian biscuit originating from Lombardy, and in particular from the town of Saronno, making this dessert a small homage to Italian culinary traditions, even though it is combined with more international elements such as pears.
