Pear and Almond Ciambellone

Ingredients

  • 3 eggs
  • 200 g of sugar
  • 100 g of soft butter

  • 3 ripe but firm pears

Preparation

  1. Preheat the oven to 180 °C (356 °F) and butter and flour a bundt cake pan.
  2. In a bowl, cream the soft butter with the sugar until the mixture is fluffy.
  3. Add the eggs, one at a time, stirring well after each addition.
  4. Fold in the sifted all-purpose flour and almond flour, baking powder, grated lemon zest, and pinch of salt. Mix everything until you have a smooth batter.
  5. Peel the pears and cut them into small pieces. Gently fold the pear pieces into the batter.
  6. Pour the batter into the prepared pan and smooth the surface.
  7. Bake for about 40-45 minutes or until a toothpick inserted into the center of the ciambellone comes out clean.

  9. Dust with icing sugar before serving.
