Pear and Almond Ciambellone

Ingredients
- 3 eggs
- 200 g of sugar
- 100 g of soft butter
- 250 g of all-purpose flour (type 00)
- 100 g of almond flour
- 1 packet of baking powder
- A pinch of salt
- Grated zest of 1 lemon
- 3 ripe but firm pears
- Icing sugar (for decoration)
Preparation
- Preheat the oven to 180 °C (356 °F) and butter and flour a bundt cake pan.
- In a bowl, cream the soft butter with the sugar until the mixture is fluffy.
- Add the eggs, one at a time, stirring well after each addition.
- Fold in the sifted all-purpose flour and almond flour, baking powder, grated lemon zest, and pinch of salt. Mix everything until you have a smooth batter.
- Peel the pears and cut them into small pieces. Gently fold the pear pieces into the batter.
- Pour the batter into the prepared pan and smooth the surface.
- Bake for about 40-45 minutes or until a toothpick inserted into the center of the ciambellone comes out clean.
- Let the ciambellone cool in the pan for a few minutes, then turn it out onto a wire rack to cool completely.
- Dust with icing sugar before serving.
