Peanut Butter Ice Cream
17/11/2023Peanut butter ice cream is a rich and flavorful dessert that can also be made at home. Here is the recipe:
Ingredients
- 500 ml of whole milk
- 250 ml of fresh cream
- 200 g of sugar
- 6 egg yolks
- 1 pinch of salt
- 200 g of peanut butter (chosen according to personal preference, can be chunky or smooth)
Preparation
- In a saucepan, heat the milk with half of the sugar over medium heat until the sugar has completely dissolved. Bring almost to a boil, then turn off the heat.
- Meanwhile, in a bowl, beat the yolks with the remaining sugar until it forms a frothy and light mixture.
- Pour the hot milk slowly into the egg and sugar mixture, stirring continuously to temper the eggs.
- Return the mixture to the saucepan and heat over low heat, constantly stirring with a wooden spoon, until the cream thickens and coats the back of the spoon (it should never reach boiling).
- Once the cream is ready, remove the saucepan from the heat and mix in the peanut butter until it is completely incorporated into the mixture.
- Strain the cream through a fine sieve into a clean bowl to remove any lumps and add a pinch of salt to enhance the flavors.
- Cover the cream with plastic wrap placing it directly on the surface to prevent a skin from forming. Let it cool completely at room temperature, then transfer to the refrigerator for at least 4 hours, preferably overnight.
- Whip the fresh cream until soft and airy and gently fold it into the cold peanut butter cream, stirring from the bottom up to not deflate it.
- Pour the mixture into an ice cream maker and follow the manufacturer’s instructions to churn the ice cream. If you don’t have an ice cream maker, you can pour the mixture into a container and place it in the freezer, stirring every hour for the first 4 hours to break up the ice crystals and make the ice cream creamier.
- Once churned, transfer the ice cream to a suitable container and let it rest in the freezer for at least 2 hours before serving.

Peanut butter is a cream that is very much appreciated in American pastry and goes well with the cold sweetness of ice cream. In some cases, to add crunchiness, you can also include pieces of salted or caramelized peanuts.
