Peanut Butter Cookies with Chocolate Chips
17/11/2023Peanut butter cookies with chocolate chips are a classic American dessert, but I’ll add an Italian touch to make them even more special. For example, we could add a dusting of powdered coffee for a more intense flavor that pairs well with the sweetness of the chocolate.
Ingredients
- 200 g of all-purpose flour
- 1 teaspoon of baking powder
- 1 pinch of salt
- 100 g of peanut butter (creamy or crunchy based on preference)
- 100 g of soft butter
- 150 g of granulated sugar
- 1 large egg
- 1 teaspoon of vanilla extract
- 150 g of dark chocolate chips
- 1 teaspoon of powdered coffee (optional, for the Italian variant)
Preparation
- Preheat the oven to 180 °C and prepare a baking tray lined with parchment paper.
- In a bowl, mix the flour with the baking powder, salt, and powdered coffee.
- In another bowl, cream the peanut butter and soft butter with the sugar until smooth.
- Add the egg and vanilla extract to the butter mixture and continue to work until you have a homogeneous mixture.
- Gradually incorporate the dry ingredients into the butter mixture and mix until a dough forms.
- Add the chocolate chips to the dough and fold them in gently.
- Using a spoon, scoop portions of the dough onto the baking tray, leaving some space between each cookie.
- Bake in the oven for about 10-12 minutes, or until the cookies are slightly golden around the edges.
- Let the cookies cool on the tray for a few minutes, then transfer them to a wire rack to cool completely.
