Peanut Butter Cookies with Chocolate Chips

Ingredients

  • 200 g of all-purpose flour

  • 150 g of granulated sugar
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 150 g of dark chocolate chips
  • 1 teaspoon of powdered coffee (optional, for the Italian variant)

Preparation

  1. Preheat the oven to 180 °C and prepare a baking tray lined with parchment paper.
  2. In a bowl, mix the flour with the baking powder, salt, and powdered coffee.
  3. In another bowl, cream the peanut butter and soft butter with the sugar until smooth.
  4. Add the egg and vanilla extract to the butter mixture and continue to work until you have a homogeneous mixture.
  5. Gradually incorporate the dry ingredients into the butter mixture and mix until a dough forms.
  6. Add the chocolate chips to the dough and fold them in gently.
  7. Using a spoon, scoop portions of the dough onto the baking tray, leaving some space between each cookie.
  8. Bake in the oven for about 10-12 minutes, or until the cookies are slightly golden around the edges.
  9. Let the cookies cool on the tray for a few minutes, then transfer them to a wire rack to cool completely.
