Peach Tart

Peach tart is a delicious dessert that can be the perfect end to a meal or an excellent accompaniment to your tea or coffee break. Here is the recipe with a truly Italian touch.

Ingredients

  • 250 g of type 00 flour
  • 125 g of cold butter, cubed
  • 100 g of sugar
  • 1 whole egg + 1 yolk
  • Grated zest of 1 lemon
  • 1 pinch of salt
  • Peach jam
  • Fresh peaches (3-4 depending on size)
  • Icing sugar (optional, for decoration)

For the shortcrust pastry:

  • 250 g of type 00 flour

  • Peach jam
  • Fresh peaches (3-4 depending on size)

Preparation

  1. Start by preparing the shortcrust pastry: in a bowl, mix the flour with the sugar and salt, then add the cubed cold butter and start to work with the tips of your fingers until you obtain a sandy mixture.
  2. Add the whole egg and the yolk, along with the grated lemon zest, and quickly knead until you get a homogeneous ball. Wrap the shortcrust pastry in cling film and let it rest in the fridge for at least 30 minutes.
  3. In the meantime, wash the peaches, cut them into thin slices (if in season) or once drained if you are using canned peaches.
  4. Roll out the shortcrust pastry into a sheet about 5 mm thick and line a previously buttered and floured tart pan with it, leaving a border of about 2 cm. Prick the bottom with a fork.
  5. Spread a generous layer of peach jam over the base of the shortcrust pastry.
  6. Arrange the peach slices on top of the jam, creating a radial design or as you prefer.
  7. If you have set aside some shortcrust pastry, you can add crisscrossing strips over the peaches for a more classic tart effect.
  8. Bake in a preheated oven at 180 °C for about 30-35 minutes, or until the shortcrust pastry appears golden.
  9. Allow to cool completely before dusting with icing sugar, if desired.
