Ingredients
- 500 g of ripe peaches
- 150 g of sugar
- The juice of 1 lemon
- 2 tablespoons of vodka (optional, helps to maintain a soft consistency of the sorbet)

Preparation
- Wash the peaches, cut them in half and remove the pit. If you prefer, you can also peel them, but it is not strictly necessary; it depends on the type of peaches and your preference.
- Cut the peach flesh into pieces and place them in a blender or food processor.
- Add the sugar and lemon juice.
- Blend everything until smooth. If it’s too thick, you can dilute it with a little water.
- (Optional) Add the vodka and blend again to combine.
- Transfer the mixture to an ice cream maker and follow the machine’s instructions, or pour it into a suitable container and place it in the freezer.
- If you’re not using an ice cream maker, stir the sorbet every 30 minutes for the first few hours to prevent ice crystals from forming and to achieve a creamier texture.
