Peach Pan Cake

The peach pan cake is a tasty dessert that can be easily prepared when you do not have an oven available. Here is an Italian version of the dish.

Ingredients

  • 3-4 ripe peaches
  • 150 g of all-purpose flour
  • 100 g of sugar
  • 2 eggs
  • 50 g of butter
  • 100 ml of milk
  • 1 packet of baking powder
  • A pinch of salt
  • Powdered sugar (optional for decorating)
  • Butter or oil for greasing the pan

Preparation

  1. Start by washing and slicing the peaches into not too thin slices; set them aside.
  2. In a bowl, beat the eggs with the sugar until you have a light and fluffy mixture.
  3. Add the melted butter and milk, mix well to blend the ingredients.
  4. Gradually incorporate the sifted flour, baking powder, and a pinch of salt into the mixture.
  5. Once the batter is smooth and homogeneous, grease a non-stick pan with butter or oil and heat it over medium heat.
  6. Pour the mixture into the pan and arrange the peach slices evenly on top.
  7. Cover the pan with a lid and let cook over low heat for about 20-25 minutes or until the cake is golden and a toothpick inserted in the center comes out clean.
  8. Let it cool slightly and then invert the cake onto a serving plate.
  9. Dust with powdered sugar before serving, if desired.

Curiosity

This cake is an expression of how the simplicity of Italian cooking can enhance the flavor of the ingredients. Peaches, the quintessential summer fruit, provide a natural sweetness and a soft texture that pairs beautifully with the softness of the cake, without requiring ovens or complicated tools.
