Peach Muffins

Ingredients
- 250 g of all-purpose flour
- 150 g of sugar
- 2 eggs
- 100 ml of sunflower seed oil
- 100 ml of milk
- 1 sachet of baking powder
- 1 pinch of salt
- 2 ripe peaches
- Icing sugar (for decorating, optional)
Preparation
- Preheat the oven to 180 °C and prepare a muffin tin by lining the compartments with paper liners.
- Wash, peel, and chop the peaches into small cubes.
- In a bowl, mix the sifted flour with the baking powder and a pinch of salt.
- In another bowl, beat the eggs with the sugar until you get a frothy mixture.
- Add the oil and milk to the egg and sugar mixture, and mix well.
- Incorporate the flour mixture into the liquid mixture, stirring gently to avoid the formation of lumps.
- Add the peach cubes to the batter and mix until they are evenly distributed.
- Fill the paper liners to about 3/4 of their height with the batter.
- Bake the muffins for about 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Once baked, let the muffins cool on a wire rack before dusting them with icing sugar if desired.
