Peach Mousse

Peach mousse is a light and refreshing dessert, perfect to conclude a meal or as a spoon dessert during summer. Here’s how to prepare it with an Italian twist; we could add a pinch of amaretto to enrich the flavor, if you like the idea!

Ingredients

  • 3 ripe peaches
  • 200 ml of whipping cream
  • 3 tablespoons of sugar (or to taste)
  • 1 packet of gelatin powder (or 3 gelatin sheets)
  • Juice of half a lemon
  • A pinch of salt
  • (Optional) A tablespoon of Amaretto di Saronno

Preparation

  1. Begin by peeling the peaches and remove the pits. Cut them into small pieces.
  2. Place the peaches into a blender or food processor, add the lemon juice and sugar, then blend everything until you obtain a smooth puree. If you want to add an extra touch, include the amaretto and mix well.
  3. Prepare the gelatin according to the package instructions. If you are using powdered gelatin, this usually means heating it with a bit of water until it dissolves completely; if using sheets, you will first need to soak them in cold water, then squeeze them out and dissolve in a bit of hot water.
  4. Mix the dissolved gelatin with the peach puree.
  5. Whip the whipping cream with a pinch of salt until it is firm but still soft.
  6. Gently fold the whipped cream into the peach puree with bottom-up movements so as not to deflate the mixture.
  7. Pour the mousse into small cups or a single container and let cool in the refrigerator for at least 2 hours before serving.
  8. You can decorate the mousse with peach slices or with crushed amaretti cookies before serving.
