Scrumptious Peach Cake
17/11/2023Here is a recipe for a scrumptious peach cake, with an Italian twist to make it even more irresistible.
Ingredients
- 3 ripe peaches (if it’s not peach season, you can use canned peaches)
- 200 g of type 00 flour
- 150 g of granulated sugar
- 100 g of butter, at room temperature
- 3 eggs
- 1 packet of baking powder
- 1 pinch of salt
- Powdered sugar (optional for decoration)
- Grated zest of 1 lemon (for an added Italian touch)
Preparation
- Preheat the oven to 180 °C.
- Wash, peel, and cut the peaches into slices or cubes.
- In a bowl, cream the butter with the sugar until you have a fluffy mixture.
- Add the eggs, one at a time, continuing to mix thoroughly.
- Gently fold in the sifted flour with the baking powder and a pinch of salt, mixing gently to keep the mixture airy.
- Add the grated lemon zest and mix to distribute evenly.
- Butter and flour a cake pan, pour the mixture in and level it.
- Evenly distribute the pieces of peach over the top of the batter, gently pressing them in.
- Bake for about 35-40 minutes or until a skewer inserted in the center of the cake comes out clean.
- Let the cake cool before dusting with powdered sugar, if desired.
This cake is delicious to enjoy as a dessert or for an afternoon snack. If you want to add an additional unique Italian touch, you can serve it with a sprinkling of crumbled amaretti cookies or accompanied by a scoop of cream gelato.
