Scrumptious Peach Cake

Here is a recipe for a scrumptious peach cake, with an Italian twist to make it even more irresistible.

Ingredients

  • 3 ripe peaches (if it’s not peach season, you can use canned peaches)
  • 200 g of type 00 flour
  • 150 g of granulated sugar
  • 100 g of butter, at room temperature
  • 3 eggs
  • 1 packet of baking powder
  • 1 pinch of salt
  • Powdered sugar (optional for decoration)
  • Grated zest of 1 lemon (for an added Italian touch)

Preparation

  1. Preheat the oven to 180 °C.
  2. Wash, peel, and cut the peaches into slices or cubes.
  3. In a bowl, cream the butter with the sugar until you have a fluffy mixture.
  4. Add the eggs, one at a time, continuing to mix thoroughly.
  5. Gently fold in the sifted flour with the baking powder and a pinch of salt, mixing gently to keep the mixture airy.
  6. Add the grated lemon zest and mix to distribute evenly.
  7. Butter and flour a cake pan, pour the mixture in and level it.
  8. Evenly distribute the pieces of peach over the top of the batter, gently pressing them in.
  9. Bake for about 35-40 minutes or until a skewer inserted in the center of the cake comes out clean.
  10. Let the cake cool before dusting with powdered sugar, if desired.
