Peach Cheesecake

A peach cheesecake is a delicious dessert perfect for summer or for those who love the sweet and fragrant flavor of peaches. Here is the recipe to prepare a tasty Italian-style peach cheesecake:

Ingredients

  • 200 g of dry biscuits (such as Digestive)
  • 100 g of melted butter
  • 500 g of creamy cheese (such as Philadelphia)
  • 200 ml of fresh cream
  • 100 g of powdered sugar
  • 1 sachet of gelatin sheets (or agar agar as a vegetarian alternative)
  • 4 ripe peaches (you can choose between nectarines, yellow peaches, etc.)
  • Juice of 1 lemon
  • Honey or an additional tablespoon of powdered sugar (depending on the sweetness of the peaches)

Preparation

  1. Start with the base: blend the biscuits until they are powdered and mix them with the melted butter until you have a homogeneous mixture. Press it onto the bottom of a springform pan (preferably lined with parchment paper) to create an even layer. Place in the fridge for at least 30 minutes to set.
  2. For the filling, soak the gelatin sheets in cold water for about 10 minutes. Meanwhile, whip the fresh cream.
  3. In a bowl, mix the creamy cheese with powdered sugar and lemon juice until smooth.
  4. Heat a little cream (take it from the whipped cream) and dissolve the squeezed gelatin in it. Be careful not to boil.
  5. Add the dissolved gelatin to the cheese and sugar mixture, stirring well until homogeneous.
  6. Gently fold in the whipped cream into the cheese mixture to avoid deflating it.
  7. Pour the filling over the cooled biscuit base and level the surface. Leave to rest in the fridge for at least 4 hours, preferably overnight.
  8. While the cheesecake is setting, you can prepare the topping. Wash, dry, and slice the peaches. In a pan, cook them with some honey or powdered sugar and a little water, just until they become soft and a sort of compote is formed.
  9. Let the peaches cool down then arrange them on the surface of the cheesecake.
  10. Place back in the fridge until it’s time to serve.
